Wine preservers are used to remove air from an open bottle of wine. The removal of air from a bottle of wine keeps the wine from turning bag. Simply pump until the needle reaches the "red zone" to know you've reached the necessary vacuum. Metrokane designed a wine preserver that allows you to see if the vacuum has held.
